Trismarter athlete, Angela Willoughby from Colorado, sent us a great recipe for a recovery brownie using Living Harvest’s Tempt protein powder. Angela is highly allergic to gluten, so this is a great alternative recovery snack for those of you out there who eat gluten free. Aside from making some great tasting gluten free snacks, Angela is training for the Escape from Alcatraz Triathlon on June 10, 2012.
Angela’s Protein BrowniesPreheat over to 350 degrees
1 c rice flour
1/2 c arrowroot flour (I use this because my husband is allergic to cornstarch)
1/2 c raw turbinado sugar
1/2 c Tempt Protein powder (I use the Vanilla Spice)
1/2 c coconut milk
1/2 c coconut oil
Mix all the ingredients, and put the mixture into a baking dish that has been sprayed with cooking spray to prevent sticking.
Bake for 30-40 minutes – you will have to watch and check when it’s done. The color will be green (because of the protein powder), but if you put a butter knife into the center, it will come out clean when the brownies are ready.
